Potato starch contains two kinds of glucan, amylose and amylopectin, the latter of that is most industrially useful. Waxy potato versions deliver waxy potato starch, which is sort of fully amylopectin, with little or no amylose. BASF produced the 'Amflora' potato, which was modified to express antisense RNA to inactivate the gene for granule bound
